How does the vacuum brake booster work?

I've always wondered this and thought now would be a good time to ask how this thing works. I was testing a burnt vacuum brake booster tonight ('93 Mazda) by pumping it down with the MityVac pump. I took forever, but it held vacuum just fine. Upon pushing the brake pedal in, the vacuum goes away and it sounds like it comes out the back. I did the same test on the vacuum booster on the Buick and it functions the same manner so I assume the Mazda one is probably ok.

How does this thing assist braking and is it normal for the vacuum to bleed off when applying the brakes??
